Morten
Nielsen has owned the restaurant “Mortens Kro” since 1997. After completing
his training in Denmark (1989/Korsør), he went to Luxemburg and worked
in a number of restaurants, one of which had two stars in the Michelin
Guide.
In 1994, he won a duel on fresh raw products organized by the Danish
daily Jyllands-Posten and, having twice won fourth place at the Danish
championship for professional chefs, he won first place in 1996, gaining
the title Chef of the Year 1996. Morten Nielsen has also taken part
in the demo show “Sternen der Welt” (“Star of the World”), organized
by AEG in Cologne, Germany, in 1996, and he has been on the Danish
national team of chefs. Morten Nielsen has now provided meals for
a long list of celebrities, spanning from Scandinavian royals to former
American Vice President Al Gore.
For 8 years, Morten Nielsen was the Danish president of Euro-Toques,
an association of European chefs whose members include some of Europe’s
top chefs. Euro-Toques is dedicated to ensuring improved food legislation,
on a national as well as an international level, through measures
such as lobbying at the EU or general debate and expression of opinion.
The new president of Euro-Toques in Denmark is John Kofod, restaurant
manager/chef of the restaurant “Sortebro Kro” in Odense.
Probably, Euro-Toques is best known in the general population for
organizing events such as “Tasting Day” in Denmark’s primary and lower-secondary
schools, which is an annual opportunity for experiencing the culinary
art of Danish chefs at a reduced price, the Euro-Toques Prize, the
Danish selection competition for Bocuse d’Òr, which is the official
world championship for chefs, and for participating in various food
committees under the Danish Ministry of Food, Agriculture and Fisheries.
Morten Nielsen has previously worked as a consultant, adviser and
developer for companies such as Danske Slagterier, Schulstad, Trip
Trap, Kvik Køkken, Sadolin, Carlsberg, FDB/Coop, pej gruppen, Svenske
Stadshoteller AB, Bech-Bruun, and several well-known advertising agencies.
He has also been course instructor/manager of team-building courses
for clients such as SAS Instituttet, Bestseller Academy and Comentor
A/S. He has held lectures and debates throughout Denmark for institutions
such as the Danish Technological Institute, FOF, Levnedsmiddelselskabet,
which is a company established by the Danish Society of Engineers,
and Folkeuniversitetet in both Aalborg and Aarhus.
Morten Nielsen is Knight of the Cordon Bleu Order, the Blue Ribbon
of the Holy Ghost, which is partly a gastronomic order of merit dating
back to the French royal house in the 18th century, and recently he
was honoured with the Order’s hand-engraved and gold-plated marble
plaque.
In 2006, Morten Nielsen was named Leader of Tomorrow by the Danish
newspaper Børsen as well as North Jutlander of the Year by the NHG
Guide to Denmark.
In 2004, Morten Nielsen was named Sansestormer of the Year at the
school Sansestormerne in Riiskov near Århus. Runners up were Peter
Lund Madsen, Peter A.G., Johannes Møllehave and youth researcher Kim
Krabbat. The citation stated that “MN brings new dimensions into the
sense experience, through his pictures as well as his poetic language”.
